Having recently been taken over by new management, discover how we partnered with La Pausa in Copenhagen to help begin their journey of evolution.
With the ambition to execute a Three Phase project over the next 12-18 months, the initial key focus of Phase One was to set the foundations and build a stable operation which will act as a stepping stone ahead of Phase Two (Winter 2023) and Phase Three (2024/2025)
In turn, Phase One focussed on developing a shift in operating standards, sequence of service, menu offerings and brand activations. CENSE were therefore engaged by La Pausa to help them during this transitional period.

Key Objectives
— Analyse existing financials with a focus on lowering cost of sales and enhancing profit margins.
— Conduct a competitor analysis of the local operators and wider Copenhagen district.
— Develop a new commercially focussed Breakfast & Brunch, All Day Dining, Cocktail and Wine menu
— Curate new standards of excellence and sequence of service for the operation.
— Write new standard operating procedures for local level accountability
— Actively source and hire senior level management including General Manager and Head Chef.
— Enhance the ambience with playlist curation, table mise en place, lighting and terrace furniture
— Create a calendar of seasonal commercial activations and brand opportunities including Bottomless Brunch
— Curate an extensive Executive Summary including local data, financial overviews, forecasted CapEx / OpEx budgets and concept development opportunities
